Fresh lime juice – 1/3 cup (4 lemons)
Olive oil – 1/4 cup
Tequila – 2 tablespoons
Fresh cilantro – 2 tablespoons (chopped)

Chile powder – 1 teaspoon
Salt and pepper – As per the taste
Boneless, skinless chicken breast halves – 2 pounds (6-8)


1) Put all the ingredients, except chicken in a zip pouch. Toss the ingredients so they mix well together. Now add chicken, seal the bag and turn around to coat. Refrigerate the bag for approximately one hour.

Cucumber- 1/2 cup
Red or orange sweet pepper – 1/2 cup
Cherry or pear tomatoes – 1/2 cup

Fresh jalapeno – 1 tablespoon
Sea salt or kosher salt – 1/2 teaspoon
Arugula leaves – 1 – 2 cups
